One Pan Asparagus, Leek and Chicken Dinner

Ingredients
  

  • 2 lemons
  • 1/4 cup olive oil
  • 5 Jersey Fresh garlic cloves
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/4 cup Jersey Fresh dill chopped
  • 1 large bunch Jersey Fresh asparagus trimmed
  • 2 large bunches Jersey Fresh Leeks cleaned and sliced into rounds
  • 1.5 lbs boneless skinless chicken parts

Instructions
 

  • Preheat oven to 450.
  • In a small bowl, place the zest of one lemon and its juice.
  • Add oil, glarlic, salt and pepper and mix well. Add half od the dill and mix. (Save the rest for finishing.)
  • Place asparagus in a large bowl and spoon some marinade over top. Toss to combine then place on a parchment lined baking pan.
  • Add the leeks to the same bowl and toss with a little more of the marinade. Add to the baking sheet.
  • Add chicken to the bowl with the remianing marinade. Toss to coat and then nestle the chicken amongst the vegetables.
  • Zest the remianing lemon over the chicken, asparagus and leeks. Slice the lemon into rounds and layer over the asparagus.
  • Bake for 20 minutes or until the chicken reaches an internal temperature of 165 degrees. (You can finish the pan under the brioler for a few minutes to brown things up.)
  • Sprinkle the remaining chopped dill over the warm dish just before serving.
