Lemon Balm Pesto

The perfect citrusy pesto for chicken, fish or vegetables!

  • 1/2 cup lemon balm leaves
  • 1/3 cup Parmesan cheese
  • 1/2 cup raw almonds
  • 2-3 TBS lemon juice
  • 1/2-3/4 cup olive oil
  • 5 garlic cloves
  • 1 tsp salt

Instructions

  • Add your greens and garlic into food processor and pulse a few times.
  • Add in all ingredients excluding the oil. Blend until it forms a paste.
  • Scrape down the sides and after you secure your top add the oil 1/4 cup at a time.
  • Once the pesto forms a smooth sauce you are ready to enjoy fresh or jar for later.

Notes

If you want to knock back the lemony side of this pesto, try half and half with flat leaf parsley, marjoram, carrot tops, or chard.
Lemon Pesto is lovely with fish dishes, chicken dishes and vegetables, cold or hot!
