Pretzel Bites and Cheese Dip

Ingredients
Pretzel Bites
- 1 ½ cups warm 110 to 115 degrees F milk*
- 1 tablespoon brown sugar
- 2 teaspoons coarse sea salt* plus extra for sprinkling
- 1 .25 oz ounce package active dry yeast
- 4 ½ cups all-purpose flour plus more if needed
- 2 tablespoons melted butter plus extra for brushing
- 9 cups water
- ½ cup baking soda
- 1 large egg
Cheese Sauce
- 1 Tablespoon butter
- 1 Tablespoon all-purpose flour
- 1 can evaporated milk
- 1 cup sharp cheddar cheese, grated
- 1/2 teaspoon salt
Instructions
Pretzel Bites
- Preheat oven to 450. Wisk together the warm milk, sugar and salt in a large mixing bowl.
- Sprinkle the yeast on top and wait about 5 to 10 minutes for the yeast to activate.
- Add the flour and melted butter. Mix everything into combined add a little more flour if the dough is too sticky, it should form a ball and not be too sticky.
- Transfer to a lightly oiled bowl cover with a warm towel and let it sit for 20 to 30 minutes.
- Cover a baking pan with parchment paper.
- Mix 1 egg with water for egg wash mixture and set aside until after boiled.
- Preheat the pot of water and add the baking soda.
- Roll out our pretzels and cut them to about 1” bites
- Place the dough into the boiling water for about 30 seconds.
- Remove the dough bites and cover them with egg wash mixture.
- Add salt on top. Bake until golden brown about 10-14 minutes.
Cheese Sauce
- Melt butter over medium high heat. When melted, add the flour and salt and mix thoroughly, mixed constantly until the mixture is golden brown.
- Add the milk and stir for about 5-7 minutes until thickened slightly.
- Remove from heat and whisk in the cheese until melted and smooth.
