Ingredients
Ingredients
- 4 eggs
- 2/3 cups milk
- 2/3 cup flour
- 2 Tablespoons melted butter browned if you have the time
- ½ teaspoon salt
- 1 Tablespoon vanilla
- 2-3 teaspoons of lemon or orange zest
- ¼ cup blueberries
- 2 tablespoons butter
Instructions
- Preheat oven to 450 degrees. You will need a blender (immersion or stand) and an oven proof iron pan.
- Put your eggs, milk, melted butter and vanilla in the blender, add the flour and salt and zip it together into a smooth batter. We recommend browning your butter to give a deeper, nuttier flavor.
- In your cast iron or steel French pan, melt two teaspoons of butter on medium heat and add your fruit.
- Let cook for 2-3 minutes spreading the fruit out across the bottom of the pan.
- Add your batter to the hot pan and let cook for another minute or so then transfer to the 450 degree oven for 15-20 minutes, til nicely browned and puffed up.
- Remove from oven. Sprinkle with powdered sugar or drizzle with maple syrup and serve warm or room temp. Pancake will deflate as it cools. Still tastes great!
Notes
