Blueberry Dutchbaby

A Dutchbaby is a tasty way to feature seasonal fruits!

  • 4 eggs
  • 2/3 cups milk
  • 2/3 cup flour
  • 2 Tablespoons melted butter browned if you have the time
  • ½ teaspoon salt
  • 1 Tablespoon vanilla
  • 2-3 teaspoons of lemon or orange zest
  • ¼ cup blueberries
  • 2 tablespoons butter

Instructions
 

  • Preheat oven to 450 degrees. You will need a blender (immersion or stand) and an oven proof iron pan.
  • Put your eggs, milk, melted butter and vanilla in the blender, add the flour and salt and zip it together into a smooth batter. We recommend browning your butter to give a deeper, nuttier flavor.
  • In your cast iron or steel French pan, melt two teaspoons of butter on medium heat and add your fruit.
  • Let cook for 2-3 minutes spreading the fruit out across the bottom of the pan.
  • Add your batter to the hot pan and let cook for another minute or so then transfer to the 450 degree oven for 15-20 minutes, til nicely browned and puffed up.
  • Remove from oven. Sprinkle with powdered sugar or drizzle with maple syrup and serve warm or room temp. Pancake will deflate as it cools. Still tastes great!

Notes

A Dutchbaby can be sweet or savory. Try this base recipe with seasonal fruits like strawberries, with fresh herbs, with meat or cheese.
