Pancetta is a type of cured meat made from pork belly. It is used as a seasoning in Italian cooking. While pancetta looks similar to bacon, the two are really quite different. In this class, we will take you through the first steps of curing your own Pancetta, walking through the ingredients needed, the proper ratios of sugar to salt, and a more natural method of curing using celery juice instead of Instacure, a nitrite heavy salt compound. Along the way we’ll discuss herbs for flavoring, curing time and how to use your homemade pancetta in the kitchen.
